Mayo Everything

A few years ago, everyone, was cooking a dish called mayo chicken. I too have my own recipe based on this recipe. Mine includes wing sauce and seasonings. I love it because it keeps the skinless, boneless chicken breasts nice and moist. More so than just bread crumbs alone. One night recently while I was in the in-between sleep and wake state, I was thinking why can’t I do that on pork chops? After it cooks you never really taste the mayo because it melts into the meat to keep it moist. (God, I hate that word but there is not another that makes sense here)

I also have a recipe for stuffed mayo chicken as well. I have not made that in a long time, it is maybe time I put that on the menu sometime soon. I stuff the chicken breasts with spinach and bacon along with some garlic. It is a fantastic recipe and pretty easy, although not quick for a weeknight dinner. It is lovely for a date night or company dinner and people will be impressed, plus it looks like you totally slaved away in the kitchen all day. Of course, if you do the prep ahead of time, it makes it so much easier.

I just saw a recipe for mayo potatoes yesterday as I was looking at recipes as I usually do. I did grab that recipe for my Plan to Eat recipe section and after I test it, I might post it here if I think it is good enough. I am not a mayo person per se, meaning that I do like it on certain things. Although these recipes use mayo in good amounts, I do not mind it at all because I can’t taste it. I have not used anything like Miricle Whip with these recipes because it actually has a taste to it that mayo generally does not. If you try any of these recipes with Miricle Whip, let me know what it was like, I would love to know. I have friends asking about using that instead of mayo.

I guess I have lots of recipe testing to do in the future!
